best ever carrot cake

assalamualaikum...

alhamdulillah.. sekarang dah makin berani utk try m'baking kek yg saya rasakan agak susah utk dibuat.. hehe sebenarnya takut tak menjadi.. antaranya termasuklah kek carrot. aritu dah penah buat carrot cupcakes, tp yg tuh simple je.. bkn pure carrot cake punya. bila jln2 kat belog kak ida SINI, terus jatuh hati.. print out resipi dan terhasillah kejadian seperti ini hehe

walaupun saya sedikit hampa, sbb bila pkai springfoam tuh kek saya jd hangit kat bawah. dan sebenarnya saya dah lama tak guna springfoam tuh sbb selalunya kek yg saya bakar mesti hangit kat bawahnya... sbb apa ye? apepun nih mmg terbaeek carrot cake yg penah saya makan.. selalunya ada rasa soda je lebih.. tp yg nih sgt ok.. pastu sarat ngn bahan2 "berseratnya" itu... mmg susah nak explain.. hehe mmg sape2 yg jd peminat carrot cake mesti cuba resipi nih.

Ingredients


2 cups plain flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 teaspoons cinnamon
4 large eggs
1 1/2 cups oil
2 cups caster sugar
2 3/4 cups coarsely grated carrots
1 (8ounce) can crushed pineapple
3/4 cup chopped walnuts or pecans atie ganti ngn almond nibs je
1 cup shredded coconut or desiccated coconut

atie tambah sebijik apple hijau yg diparut n perah jusnya
pastu tambah sikit ngn raisins

Topping cream cheese frosting
1/2 cup butter
1 (8ounce) package cream cheese
1 1/2 teaspoons vanilla essence
1 lb icing sugar


Method


Sift together all dry ingredients.
In large bowl, stir together sugar, eggs and oil with wooden spoon until well blended, about 5 minute.
Add flour mixture a little at a time, mixing well after each addition.
Add carrots, nuts, pineapple and coconut and blend thoroughly (squeez juice from carrots and pineapple).
Bake in grease and line springform pan for about 60 to 90mins @ 180°C.

Cream cheese frosting - cream butter, cream cheese and vanilla. Add icing sugar a little at a time and blend well. Add a tsp of milk if the mixture too thick.
 hehe tak letak topping pun.. tp klu letak nih, mesti lagi super sedap la kan.. takpe next time kita letak ye
